Overview

Xanthan gum is a fermentation-derived polysaccharide used as a thickener, stabilizer and emulsifier. It builds viscosity at low dosage, suspends particles and stays stable across pH and temperature.

All three grades share the same viscosity and purity specification. The choice is about particle size: a standard 80-mesh grade for general use, a 200-mesh fine grade for fast hydration in dry mixes, and a rapid-dispersing grade that resists lumping when added directly to water.
