Overview

Gellan gum is a fermentation-derived polysaccharide effective at very low dosage. High-acyl grades form soft, elastic, flexible gels and are widely used for suspension; low-acyl grades form firm, brittle, highly transparent gels.

Grade selection starts with the function: suspending particles in a beverage, building a soft creamy body, or setting a clear, heat-stable gel.
