Overview
Erythritol is a fermentation-derived sugar alcohol produced from glucose, then filtered and crystallized. It delivers clean, sugar-like sweetness without calories.
Its main role is in sugar-reduction systems: erythritol provides bulk and a sucrose-like sweetness curve, while a high-intensity sweetener such as stevia or monk fruit closes the sweetness gap.
Key value
- Clean sweetness at roughly 60–70% of sucrose
- Non-browning — no Maillard reaction
- High acid and heat stability
- Very low hygroscopicity; cooling effect on dissolution
- Coarse, medium and fine crystal grades
Applications
- Beverages and drink mixes
- Confectionery and chocolate
- Frozen desserts
- Tabletop and sweetener blends
- Bakery and sugar-reduced systems
